Slow Cooker Sloppy Joes


I adapted this recipe.  For anyone who has a slow cooker there are quite a few good recipes, some that are already classed as healthy and others that I’m sure can be adapted.

The propoints that I state are for the ingredients listed.  Please remember that if you use different ingredients then you will need to recalculate the propoints.

Serves 2/3

5pp/2pp on F&H or Simple Start (for 2)

4pp/1pp on F&H or Simple Start (for 3)

250g Tesco Healthy Living Lean Mince (7)

30g Asda Acacia Honey (3)

15g English Mustard Powder (1)

30ml Lea & Perrins Worcestershire Sauce (1)

2 tbsp Asda Cider Vinegar (0)

500g Passata (0)

2 x Peppers, Diced (0)

1 x Large Onion, Diced (0)

Salt and Pepper (0)

Mix all the ingredients together (apart from mince, onion and peppers) and then add the onion and peppers to it and stir well.

Put mince into slow cooker and pour the mixture over it.

Stir well, cover and cook on low for about 6 hours.

Serve with Warburton Thins (need pointing) and salad.

Serves 2

250g Extra Lean Mince (8)

1 small tin Garden Peas (2)

1 Onion (0)

3 Cloves Garlic (0)

1 tsp Ground Cumin (0)

1 tsp Coriander (0)

1 tsp Chilli Flakes/Powder (0)

1 tsp Garam Masala (0)

400g Tinned Tomatoes (0)

1 Beef Stock Cube (0)

Brown mince and put to one side.

Dice Onion and add to wok with minced garlic.

Once onions are soft, add all the spices (except garam masala) and cook off.

Add Tomatoes and stock cube mixed with 50ml of boiling water.

Stir through and add mince.

Simmer for 20 minutes, add peas and garam masala, stir and simmer for a further 10 minutes.

Serve with wrap/pitta and wedges or rice (need pointing – unless using WW Wraps/brown rice and having a F&H day).

I felt like having a lazy day today and decided to do this in the slow cooker. I chucked everything in the slow cooker, stirred well and cooked on high for 5 hours.

Doner Kebab


I got this recipe from this great lady in a FB group I belong to.

250g Extra Lean Mince (8)

1 tsp Dried Oregano (0)

1 tsp Salt (0)

1/2 tsp Italian Herbs (0)

1/2 tsp Garlic Salt (0)

1/2 tsp Onion Powder (0)

1/4 tsp Cayenne Pepper (0)

1/2 tsp Black Pepper (0)

Preheat oven to gas mark 4.

In a large bowl, combine the dried oregano, dried Italian herbs, garlic powder, onion powder, cayenne pepper, salt and black pepper.

Add the beef mince and mix thoroughly for 2-3 minutes.

Keep punching and kneading until no air pockets remain and the kebab meat is extremely smooth.

Shape the seasoned mince into a loaf and place on a baking tray.

Bake in the middle shelf of the oven for about 1 hour, turning the loaf half way through the cooking time to ensure even browning.

Once cooked, remove from the oven and cover with foil.

Allow to rest for 10 minutes.

Slice the donor kebab as thinly as possible and serve with ww pitta or ww wrap, chips and/or salad (need to pp pitta/wrap/chips if having a pp day).

This is my type of recipe!  One pot, throw everything in and leave!

3 x Oxo Beef Stock Cubes (1)

2 x Peppers, Diced (0)

Mushrooms, Sliced (0)

2 x Cloves Garlic, Minced (0)

2 tsps Worcestershire Sauce (0)

1 tsp Dried Mixed Herbs (0)

Add everything to the slow cooker.

Turn on low.

Cook for 8 hours.

Serve with pasta (need to pp – or use wholewheat if F&H and whole recipe will be 1pp).

80g Wholewheat Pasta (7)

250g Extra Lean Mince (8)

1 tbsp Parmesan (2)

1 x Onion, Diced (0)

1 x Beef Stock Cube (0)

1 tbsp Tomato Ketchup (0)

1 x Tin Tomatoes (0)

Mushrooms (0)

2 x Garlic Cloves, Minced (0)

1 x Carrot, Chopped (0)

10ml Worcestershire Sauce (0)

Fresh Basil (0)

Add mince and cook till almost brown.

Add diced onion, minced garlic, sliced mushrooms and diced carrots and cook for a further 3-5 minutes.

Meanwhile cook pasta to manufacturers instructions.

Add stock cube, Worcestershire sauce, tomatoes and tomato ketchup, stir well and add tsp chopped fresh basil.

Stir well and once cooked, serve over pasta with a sprinkling of parmesan on top.

100g Wholewheat Pasta (9)

250g Extra Lean Mince (8)

Passata (0)

Mushrooms (0)

1 x Carrot (0)

1 x Onion (0)

1 x Clove Garlic (0)

2 tsps Dried Mixed Herbs (0)

1 tsp Ground Cumin (0)

Salt and Pepper (0)

1 tsp Dried Basil (0)

1/2 tsp Garlic Granules (0)

1 tsp Crushed Chillies (0)

Preheat the oven to Gas Mark 6. Mix together the minced beef, carrot, onion, garlic, dried herbs and cumin. Season well. Form into about 12 meatballs.

Spray a non-stick baking sheet or roasting pan with low fat cooking spray. Arrange the meatballs on top, then roast them for 20 minutes.

On another shelf roast the mushrooms.

Ten minutes before the meatballs are done, put the pasta on to cook in a large saucepan of boiling, salted water. Cook for 8-10 minutes, or according to pack instructions.

Warm the passata in a pan. Season with basil, garlic granules and crushed chillies.

Drain the pasta and return to the saucepan with the passata. Heat for a minute or two, then add the meatballs and mushrooms and stir them through gently. Serve.

500g Extra Lean Mince (16)

Mushrooms, quartered (0)

8 x Bacon Medallions (5)

2 x Cloves Garlic, minced (0)

1 x Onion, diced (0)

1 large egg (3)

1 tbsp Tomato Puree (0)

1 tsp Salt (0)

1 tsp Dry Basil (0)

1 Beef Oxo Cube (0)

10ml Worcestershire Sauce (0)

Chilli and Garlic Seasoning (0)

Pre heat oven Gas Mark 6

Dry fry the mince, onion, garlic and mushrooms until the mince is brown and the onions and mushrooms are soft.

Drain the excess liquid.

Combine all the other ingredients except the egg and bacon and mix well.

Gradually add the egg stirring constantly.

Spray a loaf tin with fry light and line with the bacon, firmly press the mince into the tin.

Bake in the oven for 25-30 minutes.

New York Patty Melt with Wedges

Another recipe from Lulabella’s Kitchen.

Unfortunately I forgot to buy some potatoes, so had to use new potatoes that I had in and they weren’t big enough to make wedges but they (and the patty) were delicious).

250g Extra Lean Mince Beef (8)

2 Warburtons Brown Thins (6)

2 x Lowlow Cheesy Slices for Burgers (2)

400g Potatoes (9)

1 tsp Garlic Powder (0)

1 tsp Onion Powder (0)

1 tsp Salt (0)

Parsley (0)

1 tsp Paprika (0)

Red Onion (0)

Lettuce (0)

Put the meat into a mixing bowl and add all the seasoning and herbs.  Mix together and separate into two portions and lightly flatten into a burger shape. 

Spray a griddle pan with some fry light and cook on one side for about 3-4 minutes depending on how you like them cooked. Turn over and cook again for around 2-4 minutes, depending on your cooking preference and add the cheese slice whilst cooking so that it can melt. 

Put the thins on George Foreman and allow to grill.

Preheat the Oven to gas 6. Cut the potatoes into quarters and par boil for about 4 minutes.

Place on a pre greased baking sheet and sprinkle the wedges with the paprika and spray with frylight.

Cook for about 15 minutes or until cooked to your preference.

Serve with mayo (needs pointing), lettuce, red onion.

1/4 Jar Passata (0)

In a frying pan, sprayed with frylight, soften the garlic and onion.

Add the mince and brown.

Add the passata, chopped basil and some chilli flakes and simmer until cooked.

Heat the taco trays according to the packet guidelines.

Add the mince to the taco trays.

Top with lettuce, cheese and tomato.

Stuffed Pasta Shells in a Cheesy Tomato Sauce

Serves 2

200g Large Pasta Shells (8)

250g Extra Lean Mince Beef (8)

2 tbsp Grated Parmesan (3)

80g Half Fat Mozzarella (4)

1/2 Jar Passata (0)

1 Onion (0)

2 Cloves Garlic (0)

Fresh Basil (0)

2 tbsp Water (0)

Salt and Pepper (0)

Cook the pasta shells for about 7-8 Minutes until softened but not cooked the whole way through set aside and cool down.

Preheat the oven to Gas Mark 6.

Fry 1/2 the onion and 1 garlic clove until softened in a saucepan sprayed with oil. Add 1/4 Jar of Passata and the water and simmer for 5-8 minutes.

Season, tear the basil and add that. Continue cooking for another 5-7 minutes. If you want the sauce a little thicker then cook for longer, this also allows the flavours to concentrate. If its getting to thick just add a little more water.

In a frying pan sprayed with oil, soften the remaining garlic and onion. Add the mince beef and brown.

Pour in the other quarter of the Passata, add a little more of the basil and simmer until cooked through. Leave for about 5 minutes to cool down.

Ladle half of the tomato sauce on to the bottom of a ovenproof dish and set aside the remaining sauce.

Fill each shell with around a Tbsp of the mince beef mixture and place in the dish with the open side facing downwards.

When all the shells are filled, spoon the remaining tomato sauce on top of the shells.

Top with Parmesan Cheese and then the Mozzarella.

Place in the oven and bake for 10-15 minutes until the cheese has melted and mixed with the sauce.

Serve with a nice big side salad.
